Gaiwan — 盖碗 ('lidded bowl') — is a popular alternative to the teapot in China, with its own special character. At first the device may feel awkward, but you quickly get used to it and appreciate the control it gives: you can watch the leaves open and the liquor colour change, and you can adjust the pour by changing the gap between bowl and lid. Material matters too: in China tea is tasted in porcelain gaiwans before buying, because porcelain reflects aroma off the walls and makes it more expressive. This category also includes Japanese gaiwans with a spout — hōhin and shiboridashi. Read more about choosing ware in the blog, or sip hot tea straight from the gaiwan like the old-school tea drinkers of China.
